Steam flaking is when increased moisture and heat are added to soften grains (such as corn and barley) before passing through rollers to produce flakes.

Steam flaking can increase the grain's surface area, improve starch digestibility, enhance ruminant performance (including better lactation performance and growth performance in feedlot cattle), gelatinize the starch in grains to make them easier to digest, and increase the energy available from the feed, thus raising the efficiency in cattle and dairy cows.
